Yogurt Tap


You can't even see the frozen yogurt under all of these toppings...but Cecile, Ana, and I went to the Yogurt Tap last Saturday. You get your own frozen yogurt, pick the flavor, then put on all the toppings you want. Then they weigh it. This cost less than $5! That's so good for frozen yogurt! I love getting fresh fruit on mine because it's so expensive to buy fresh fruit in variety from the grocery store and it goes bad so fast. My favorite thing is the blackberries mmmm! And I love the tartness of real frozen yogurt.

Farfalle with Mushroom Sauce

I tried my first recipe from my 5 ingredient vegetarian cookbook last night! It was for sauteed mushrooms, parmesan cheese and olive oil with bowtie pasta. I also added broccoli because I forgot how much I love broccoli and sometimes I don't eat enough vegetables. I'm excited to try my next recipe, it's either going to be a cauliflower and curry pasta or a coconut ginger rice. Tonight I'm doing a pesto and mozzerella pizza that I got from Trader Joes and chocolate pudding for dessert!

Quiche and Salad

For lunch today I brought a quiche from Trader Joes. For the amount of fat grams in it (I won't even tell you how many it's that bad) I thought it should have tasted a little less....chemical. I was surprised by the salad though. I got it from the refrigerated section of our little food section at school. It had honey mustard, parmesan cheese, carrots, onions and some really good croutons. I took off the cherry tomatoes because I hate them.

Stir Fry




I made a stir fry with kung pao sauce last night. It was my first time cooking with tofu! It turned out pretty good but next time I'm going to brown the tofu a little more before putting the rest of the veggies in. I also made a few vegetable pot stickers as a side. I have TONS and TONS of leftovers of this stuff - seriously 4 or 5 more meals worth. I think I might get sick of it. That's what happens when you have only yourself to cook for. Atleast I know it turns out well and can make it if I need to make a meal for guests anytime soon. I am so tired. It's Dooley's week at school and Kid Cudi performed tonight. It was fun to get to go to a free concert and we had free Moe's burritos at school (I forgot to take a picture). We have two girls visiting us for Visit Emory and are sleeping in our living room right now. I'm off to bed so I can get up for my professional development series at 8:30am tomorrow!

FroYo and CupCakes







Today was a BEAUTIFUL day and warm so after work I went and bought frozen yogurt...and then cupcakes. (Don't worry, I haven't eaten the cupcakes yet). It was a bit of a sweet splurge, but this warm weather just made me crave it and I was in the Virginia Highland area for an interview. The yogurt is from Juicy Green and it is plain frozen yogurt with fresh blackberries, strawberries, and almonds. I had NO idea how good REAL frozen yogurt is until I moved here. There are so many yogurt shops around and I had never even heard of one in Raleigh - only about the Pinkberry trend in California. It's so tangy and tastes healthy, not like icecream. The cupcakes are from the Atlanta Cupcake Factory as usual and I got Banana/brown sugar, vanilla/vanilla, lemon/lemon, and the lady convinced me to try chocolate/vanilla with butter toffee. I was leaning towards red velvet/almond or chocolate/oreo, so I hope it's good! She said its their newest flavor.

Sweet Corn Soup

I've been really into soup lately. Especially creamy ones. Ate this at Chili's this weekend. It's Sunday night and I'm really tired so I don't have much to write. This is going to be a busy week at school and we are having 2 girls stay in our apartment for Visit Emory next weekend. It seems like NO TIME since last year when I came down to Atlanta for the same visiting weekend. I was so stressed out and everything seemed like a blur. I couldn't imagine myself in such a different life. But here I am! And it's been wonderful. I hope the girls staying with us will end up coming here for school.

Sono Sushi


Angela and I went to Sono for sushi downtown the other night. It has most of the same rolls as Mura but is better and newer. I got the piano roll with avocado on top and the snapdragon with mango and shrimp on top. Both have crunchies and some kind of crab salad/shrimp inside. The picture is a little dark, I need a flash on my phone camera.

Amy's Indian Food


This was pretty good. It's hard to find frozen vegetarian food. This was also at Walmart for $2 cheaper than it is at Kroger. I'm also reading a book about a guy in India now (you can see the book in the corner of the picture). So I felt authentic reading my book while eating Indian food, haha. The book is called Shantaram, it's REALLY good, but getting very intense near the end.

Pei Wei

This is my leftover Thai curry with tofu and vegetables from Pei Wei in Cary. Pei Wei has AWESOME tofu. Sometimes I don't like the taste or texture but it is very firm and has a great taste at Pei Wei. It almost looked like strips of mushrooms. I added a salad with pecans and poppy seed dressing. I also had some leftover edamame - I never knew that edamame still tasted good warmed up leftover, but it does! It tastes almost exactly the same. This was a delicious meal, even moreso the second time around.

Breakfast


Here's a delicious breakfast I made...it was actually eaten at lunchtime. I made the eggs with cheese and mushrooms and I found the pancakes and bacon in the freezer. Also mom had some blueberries out so I stole a few for my pancakes.

Thai Iced Coffee

Rudino's Baked Spaghetti




Can't believe I forgot to post yesterday! I was driving home for 7 hours so that's my excuse. But I did try McDonald's new sweet chili dipping sauce. The ONLY time I eat fast food now is when I am making the Atlanta-Raleigh drive. It was the first time I had their chicken nuggets since I was like 7. It was really good I'm surprised to say, might be making a stop again on the drive home! I seriously have only eaten chickfila as fast food since I've lived in Atlanta.




And for today I got baked spaghetti from Rudinos in Holly Springs http://rudinos.com/ It looks so good I'm about to sit down and eat it now!

Thaicoon

Here's a cheap way to eat at a sushi restaurant without actually ordering sushi. I was craving a salad with that dressing but had no lettuce. Also I've bought 4 different bottles of ginger dressing and NONE taste like the sushi restaurant kind. I'm still looking.


Pizza

A little leftover pizza lunch with parmesan cheese from Kroger. I love buying the fresh parmesan it's so much better than anything else. Now I can't write anymore because I have to go keep searching for a summer job.

Southern Food

Tonight I got dinner from the place I realized I only know as "the southern food place on the corner". Even though I drive past it everyday I have no idea what it's real name is. You can get a veggie plate like this and a drink for $5 even. It's pretty good but kind of random that it's owned by a Korean family.


Work Lunch

Lunch today at work is an egg salad croissant, macaroni salad, and leftovers from a chickfila lunch someone left in the breakroom. Chickfila lemonade is the best!!

Indian

Here's some free indian food I got from the Vaccine Dinner club meeting. That's why it's a little messy, I brought it home in my car with another plate on top of it. I had never had indian food until about a year ago. I'm not sure if it is my favorite, but I like that a lot of it is vegetarian. Everything on this plate is vegetarian, I didn't get the chicken dish that was offered. It also came with a HUGE round thing of pita (I don't know what the correct name for it is) and a cucumber sauce that tasted like greek tzaziki sauce. I wish I had been able to bring some of that sauce home too.

Bachelor Sushi

Tonight is the finale of The Bachelor and I had to get sushi to celebrate! This is a double shrimp roll from Thaicoon with cream cheese instead of cucumber and eel sauce on the side. I also got Tom Yung Kung soup that is a hot and sour soup with shrimp, lemon grass, muchrooms, lime juice, and hot chili pepper. Now back to the show!


Cafeteria lunch

Today I ate lunch at school and had a salad and vegetable soup. It was delicious. Emory has a great cafeteria. I debated whether to get sushi or a salad, but the salad won.
